Malic Acid - This is a principal acid that is found in apples and pears.  You should use per your recipe directions, up to 3/4 ounce per gallon to balance acidity.  You may want to refer to "The Joy of Home Wine Making" by Terry Garey or the "Wine Makers Recipe Handbook" for additional information. 2 oz packages.
