Briess White Sorghum Syrup, 45 DE - HM, 7-lb Jar, is a GLUTEN FREE concentrate made with unmalted grain, not the cane  of the white sorghum and is used to produce gluten free beer.  Provides proteins and amino acids which are neccessary for yeast nutrition, head retention and body as well as color and flavor.  The extract closely mimics the functionality and flavor of malt extract.  Use as a 1:1 replacement to produce gluten free beer.
